The red garlic of Sulmona regularly emits the floral scape, also called clod, which is present in the inner central part of the plant. The clods, cut into small pieces, are blanched and preserved in extra virgin olive oil.
Excellent as a side dish and as an accompaniment to meat and fish hors d’oeuvres, with bruschetta and vegetable dishes.
