With their excellent and unique taste, our asparagus in oil confirm our commitment to seeking out the authentic flavour of tradition and bringing it to the highest level of goodness.

Very important is the choice of the raw material of origin, wild asparagus, the shoots of wild plants that have always characterised our land. The asparagus is picked in spring, in the countryside.

To the lightly blanched asparagus we add our olive oil, one of Orominerva's flagship products because it is a 100% Italian extra virgin olive oil and, like the whole line of vegetables in oil, deserves to be served with the vegetables.

Our asparagus in oil is also garlic-free and preservative-free. The traditional, non-invasive treatment we use to put them in jars ensures that this special delicacy retains all its qualities.

The special nature of wild asparagus

Asparagus has an important history in our culinary tradition. It comes from a plant that grows wild in the countryside and is particularly common in central and southern Italy.

Unlike cultivated asparagus, wild asparagus is less readily available and serves a niche, more exclusive market. Their flavour is increasingly sought after by those who know its value; it is intense, much more vivid than the cultivated variety.

To encapsulate this in our goodness, we use wild asparagus picked at the best time of year, between late March and early June, when the asparagus is still young and tender. And we bring this flavour to its fullest expression during the preparation of the pickled asparagus, carrying out each step with due care.

We use no preservatives. We preserve the natural goodness of the asparagus and enhance it with our EVO oil to achieve the original flavour in a new guise. It is this combination of tradition and attention to new trends that guides our work and, in this case, leads to the precious taste of our asparagus in oil.

Serving asparagus in oil

Rich in fibre and low in calories, asparagus can be cooked in many ways. Just like fresh, asparagus in oil can be sautéed in a pan, with a shorter cooking time, and form the basis of really tasty dishes also thanks to the use of Orominerva EVO oil in which they are soaked.
